Good Cook sent me some fun baking tools. I don’t do a lot of baking but, I’m down to make some low carb sugar-free peanut butter cookies. You don’t have to forgo that sweet taste just because you’re keto or sugar free. A sweet tooth is a real thing, but this no carb peanut butter cookies recipe can help quench that need while still allowing you to stay off sugar.

So, I set out in search of a Keto,no sugar, lowcarb cookie recipe for the classic peanut butter cookie!

I got close – I was able to make them no sugar and the only thing that had carbs was the icing & peanut butter.So, this keto peanut butter nutty cookie recipe is on the list of my favorite keto recipes and is perfect for any sweet tooth.

Y’all know I only eat sugar free, and as carb free as I can, if you don’t know why you can read about my weight loss journey and the reason behind it!

I don’t want to give up things in my life to do the Keto diet/low-carb diet, or go sugar free – my reasoning behind that is this:

I think many people don’t keep up their weight loss and end up yo-yo dieting which is very bad for your health, because they gave up things they really enjoyed and it was too hard.

I wanted to make sure whatever I did it was something I could do for the rest of my life. Cutting out added sugar helped.

That’s why I didn’t choose to lose the weight by exercising, I knew if I did – I would NEVER keep that up! I HATE exercising!

I always try and find a way to be able to change what I like to fit my new lifestyle, and that’s what it has to be when you do this a complete lifestyle change.

So, make sure you think about it that way before you start and you’ll be more successful and it will make it easier, I have lost over 100lbs and kept it off over 5 years now. This lifestyle has allowed me to lower my blood sugar so much so that the Dr. told me I no longer have Type 2 Diabetes.

Peanut Butter Cookies: Keto Sugar Free Low Carb

Prep Time: 5 minutes

Cook Time: 8 minutes

Total Time: 13 minutes

These sugar free, low carb, Keto Peanut Butter Cookies are perfect when you want something sweet but not guilt that comes with it.

Ingredients

  • 2 cups smooth natural peanut butter
  • 1 cup powdered Splenda
  • 2 large eggs

Instructions

  1. Preheat the oven to 350 degrees.Lightly grease a cookie sheet.Mix well:

  4. eggs
  5. Press into cookie cutters, or just drop the mix by spoonfuls on to the cookie sheet. Press with fork to make those oh so famous marks in them.

    Bake in the preheated oven for about 8 minutes or until the center is dry.

  7. For one of the batchesI used some funcookie cuttersand filled them with the dough to shape them!

  • 2 cups smooth natural peanut butter ( I haven’t tried any other nut butter, if you do be sure to leave a comment and tell us about them)
  • 1 cup of sugar free sweetener or sugar substitute, I used powdered Splenda (or you can use any other no carb sweetener or low carb sweetener) (some people have even called these: Splenda Peanut Butter Cookies)
  • 2 large eggs

Instructions

First thing preheat the oven temperature to 350 degrees.

Lightly grease a baking sheet.

Mix well in mixing bowl make sure to get the sides of the bowl:

peanut butter

Splenda or other no sugar added sweetener

eggs

Press into cookie cutters, or just use your cookie scoop to drop the peanut butter cookie dough balls by spoonfuls on to the prepared baking sheet or on parchment paper on top of your cookie sheet (I prefer no clean up 🙂 ).

Press with fork to make those oh so famous criss-cross pattern marks in them.

Bake cookies in the preheated oven for about 8 minutes or until the center is dry and golden brown or a caramel color.

Remove from oven and place on a cooling rack to cool before icing.

We used a sugar free store bought icing inSqueeze Bottlesto decorate the low carb cookies.

For one of the batchesI used some funcookie cuttersand filled them with the dough to shape them!

Be sure to keep them in an airtight container.

You can of course try some variations. Change up and use a different nut butter like almond butter, or use crunchy peanut butter (just be sure to choose one that says no sugar added). Let us know what great options you come up with in the comments.
