My love for casseroles know no bounds πŸ™‚ I think the type of recipe I make most in my house has to be Mac and Cheese – it is yummy and easy to make

I want to take my traditional mac and cheese dish and give it a twist – add in some veggies ( to keep the cost down I used frozen veggies )

I also added chicken into the mix to increase the amount of protein – overall everyone loved the dish

Now this recipe is not traditionally gluten free. I did not make this recipe gluten – free but you can totally do with the following changes

Gluten Free pasta and gluten free bread crumbs – use the same measurements

You can also substitute almond milk for the 2% milk I used – same measurements

Also you can change what veggies you use – my dad chose the type we used for the Easy Mac and Cheese Veggie Chicken Casserole Recipe

My dad cooked the chicken in a skillet with a small amount of oil – dash of salt and pepper

Here is my dad cooking – of course the bird clock is still there ( if you do not know that * cough* bird clock chirps every hours REALLY loudly drives me up the wall)

You have to love the reflection of my dad in the serving spoon ( thanks dad for holding the spoon for me πŸ™‚ )

This dish is more than enough to feed 6 people – I do suggest serving it with a light salad πŸ™‚ The dish also reheats very well β€” but it gets a little dry ( that is what happened when I reheated a portion for my husband the next day )

Also I need to tell you of my obsession of those salt and pepper shakers! I LOVE THEM SOOOOO MUCH ! I have been binge buying vintage salt and pepper shakers ( I have a huge haul coming up)

Easy Mac and Cheese Veggie Chicken Casserole Recipe

Ingredients

  • 4 Tablespoons of Melted Butter
  • 1 Cup of Milk
  • 8 Ounces of Dried Pasta Cooked ( I used rotini )
  • 2 Cups of Diced Cooked Chicken
  • ΒΌ cup of Parmesan cheese
  • 2 Cups of Cheddar Cheese
  • ΒΌ Cup of Bread Crumbs
  • Dash of Salt and Pepper
  • 2 Cups of Veggies

Instructions

  1. Preheat oven to 400 - light grease a casserole dish
  2. In a bowl mix 3 tablespoons of melted butter with - cooked pasta, milk, veggies, cheese, salt, pepper and cooked chicken
  3. Mix bread crumbs, Parmesan cheese, and 1 tablespoon of melted butter in a small bowl
  4. Pour the pasta mixture into the casserole dish top with the bread crumb mixture
  5. Bake for 30 minutes uncovered
  6. Enjoy!
